Nothing beats a warm, grilled cheese sandwich, especially as the nights get colder and the days get shorter. Add a bowl of warm tomato basil soup, for dipping the grilled cheese sandwich, makes the cold weather much more bearable. A great classic, combining the crisp crunch of two slices of bread, grilled to perfection on the stove, with gooey and flavorful cheese.
How to make a grilled cheese sandwich over the stove
It’s pretty simple to make a grilled cheese sandwich, and with a few key tips, you can make an incredible grilled cheese sandwich over the stove.
- Mayonnaise – Instead of using butter to coat the slices of bread, spread some mayonnaise on each slice, and grill the mayo side down. This will give the bread a crisp crunch, without getting it soggy or greasy from using butter.
- Low heat – Using a low heat on the stove, will allow, not only the bread to cook evenly, but will also enable the cheese to fully melt.
- Open faced – cooking each slice of bread with the cheese split evenly between the bread, will provide additional help to make sure the cheese melts all the way through. Once the cheese begins to melt, combine the two slices of bread, and cook for another minute per side.
- Choice of cheese – any cheese will work, get imaginative! I like to use american or cheddar for the classic, grilled cheese sandwich. Other combinations can work really good, especially if you plan on adding other ingredients. I like to add cream cheese and sun dried tomatoes, when I’m feeling I need a me meal :).
Yummy Grilled Cheese
The key to a great grilled cheese is adding mayonnaise, instead of butter to the outside of the bread. This gives it a great crunch, without the sogginess or greasiness butter leaves. These can be made with or without the tomato’s, and usually ready in 5-10 minutes.

Ingredients
- 2 slices Italian bread (really any bread should work)
- 1/2 tbs mayonnaise
- 2 slices cheddar cheese
- 2 grape tomato’s, sliced
Instructions
- Start by heating a skillet over medium heat.
- Spread the mayonnaise over 1 side of each of the bread slices, this will be the side exposed to the heat.
- Once the skillet is heated, place mayonnaise side down on the skillet for both slices.
- Place each piece of cheddar cheese on each bread slice
- Add the tomato’s to only one bread slice.
- After about a minute, place the bread slice, without the tomato’s on top of the tomato half, making the sandwich.
- Mash the sandwich together with a spatula, and let cook for an additional minute.
- Now flip and cook the other side for about 1-2 minutes until the cheese is melted.
- Serve immediately. Goes best with a bowl of tomato soup.
Notes
Pro tip – Cutting the sandwich diagonally, creates maximum dipping in tomato soup.
