We’re continuing with our summer salad series. The grilled watermelon and honey lime salad has a really complex flavor profile. If you’re feeling fancy and adventurous this salad is for you. The main flavors that come through are the grilled watermelon and mint.
Not going to lie it was a weird flavor at first. It took some time to get used to and definitely involved some jokes about feeling fancy and having an elevated palate even after we just discussed our goals for this blog being to have realistic, on hand, and everyday ingredients. This meal is not a normal thing for us but gave us an excuse to put our spearmint into something that is not alcoholic. Joel can tell you how he looks at these recipes as a place where he can express his creativity.
Yesterday we had bison burgers and bratwurst hot dogs. My stomach was glad for the lighter meal that came from this salad. Also, if you’re a fan of chili lime salt it mixes beautifully with this salad. I’m not going to ignite a brand war, but I used Tajin because that’s what I had on hand. I know everyone has their favorite spice mixes and salsa brands. Also, I had 2 bottles of it so might have stolen it from my roommate’s boyfriend at some point. Whoops.
Goya
In other news, it’s time to boycott Goya. In addition to pretending to be a Latinx company (Spain is not in Latin America and were the Colonizers), their CEO came out in a press conference (no mask in sight in a pandemic, really? ) supporting the president. Before your trash it all, donate to a food pantry or use it up. I just wouldn’t waste any more money on their products. We are all about the unbranded life, but Herdez and La Costena are other brands you can buy instead. Or you can search online for the many tweets and posts sharing home made and family recipes for seasonings.
Grilling the Watermelon
It can be a little weird at first, but grilling fruit is actually super easy, and quick. It can really bring out the flavor profile, and add a bit of smokiness to the fruit. To grill the watermelon, simply coat the watermelon slices lightly with olive oil and salt. Preheat the grill to medium heat, and place the watermelon on the grill. It typically takes 2 to 3 minutes per side. You are aiming at getting a slight char on each side, so nothing too crazy.
The cashews mint and leafy greens were the most expensive parts of the recipe because watermelon is in season right now. Mint can also be pricey, but before you go and plant mint for yourself, make sure you have a plan. Mint is a spreader and can take over your lawn if you don’t contain it. Our mint is in a pot and is a happy little plant. At the moment it’s not worth it to put in a gravel retainer wall.

Grilled watermelon, fresh leafy greens, topped with a honey lime dressing, really makes for a fresh and delicious salad, that’s anything but average. Grilling the watermelon carmalizes it and really takes this salad to another level.

Ingredients
Dressing
- 1/8 c. honey
- 1/8 c. lime juice
Salad
- 1/4 watermelon (about 4 cups) – sliced for grilling
- 1 c. chopped fresh mint
- 1/4 c. chopped cashews (raw and unsalted)
- 5 c. mixed leafy greens (I like arugula and spinach)
- salt and pepper to taste
- olive oil for drizzling
Instructions
Dressing: Whisk together honey and lime juice in a small bowl, and set aside.
- Preheat a grill to medium heat, or broiler.
- Slice the watermelon and lay out on a flat surface. Drizzle olive oil over them and lightly sprinkle salt.
- Place the watermelon slices on the grill for about 2-3 minutes per side. You want them to be slightly charred.
- Remove the watermelon from heat, and cut them into small 1/2 inch cubes.
- In a large bowl, combine the watermelon, mint, cashews, leafy greens, and toss to mix ingredients
- Add salt and pepper to taste, toss in the dressing.
- Serve immediately.
Notes
- Salad does not stay well if not eating within the same day you make it.
- You could layer the ingredients in a mason jar, keeping the watermelon and dressing at the bottom, with greens and remaining ingredients on top to use as a really easy lunch during the week.
