Grilled Watermelon and Honey Lime Salad

Grilled watermelon, fresh leafy greens, topped with a honey lime dressing, really makes for a fresh and delicious salad, that’s anything but average.  Grilling the watermelon carmalizes it and really takes this salad to another level.

Ingredients

Dressing

  • 1/8 c. honey
  • 1/8 c. lime juice

Salad

  • 1/4 watermelon (about 4 cups) – sliced for grilling
  • 1 c. chopped fresh mint
  • 1/4 c. chopped cashews (raw and unsalted)
  • 5 c. mixed leafy greens (I like arugula and spinach)
  • salt and pepper to taste
  • olive oil for drizzling

Instructions

Dressing: Whisk together honey and lime juice in a small bowl, and set aside.

  1. Preheat a grill to medium heat, or broiler.
  2. Slice the watermelon and lay out on a flat surface.  Drizzle olive oil over them and lightly sprinkle salt.
  3. Place the watermelon slices on the grill for about 2-3 minutes per side.  You want them to be slightly charred.
  4. Remove the watermelon from heat, and cut them into small 1/2 inch cubes.
  5. In a large bowl, combine the watermelon, mint, cashews, leafy greens, and toss to mix ingredients
  6. Add salt and pepper to taste, toss in the dressing.
  7. Serve immediately.

Notes

  • Salad does not stay well if not eating within the same day you make it.
  • You could layer the ingredients in a mason jar, keeping the watermelon and dressing at the bottom, with greens and remaining ingredients on top to use as a really easy lunch during the week.
