It’s getting hot here in the Midwest and as much as we love soups there comes to be time to put the ladle away. I come from one of those families where the vegetables are mostly canned and/or drowned in sauce, and the only green was iceberg lettuce. Hate on the iceberg lettuce all you want, but at least it was a vegetable. Joel had to convert me over to the beauty of salads as an entrée. This simple summer salad, is so easy to make, combining apples, tomatoes, and cheese to give you a great side salad.
One of the best parts of this salad is the mixture of sweet from the apple and tangy from the dressing and onion. Joel loves this salad with olives, I on the other hand wouldn’t touch an olive with a 10-foot pole.
This recipe is quick, cheap, and easy. I crave salads now especially after having a lot of meat like over this past “holiday” weekend. We tend to eat more salads after coming home from San Antonio, home of the meat and gravy and beans and tortillas with everything plate. Salads are very versatile so play with your ingredients and textures to match your preferences!

This super simple salad only takes minutes to make, and uses household staples, making it easy to add it in to your weekly routine. The best part of a salad is you can add or remove ingredients depending on your taste buds.

Ingredients
Dressing (makes approximately 3/4 c.)
- 3 tbs apple cider vinegar
- 4 tbs olive oil
- 1 tbs minced onion
- 1 garlic clove (minced)
- 1 tsp sea salt
Salad
- 1 1/2 cup romaine lettuce (chopped)
- 1 apple (chopped)
- 1/2 onion sliced
- 1/2 cup olives (I love Kalamata) – sliced
- ~15 grape tomatoes cut in half
- 1/2 cup shredded mozzarella cheese
- salt to taste
- 1 tsp black pepper
Instructions
The great thing about salad is once you have all the ingredients cut up, you just combine it.
The Dressing:
Mix all the ingredients together in a small bowl. Set aside while you prepare the salad.
The Salad:
Combine all ingredients, then toss to make sure well combined. Add in dressing and serve immediately. If you aren’t planning on eating the entire salad, only add dressing to the portion you will be eating. Salad with dressing does not do well as leftovers.
Notes
You can easily leave out any ingredients you don’t like, such as olives, and still have an amazing salad.
