Yummy Grilled Cheese

The key to a great grilled cheese is adding mayonnaise, instead of butter to the outside of the bread.  This gives it a great crunch, without the sogginess or greasiness butter leaves.  These can be made with or without the tomato’s, and usually ready in 5-10 minutes.

Ingredients

  • 2 slices Italian bread (really any bread should work)
  • 1/2 tbs mayonnaise
  • 2 slices cheddar cheese
  • 2 grape tomato’s, sliced

Instructions

  1. Start by heating a skillet over medium heat.
  2. Spread the mayonnaise over 1 side of each of the bread slices, this will be the side exposed to the heat.  
  3. Once the skillet is heated, place mayonnaise side down on the skillet for both slices.
  4. Place each piece of cheddar cheese on each bread slice
  5. Add the tomato’s to only one bread slice.
  6. After about a minute, place the bread slice, without the tomato’s on top of the tomato half, making the sandwich.
  7. Mash the sandwich together with a spatula, and let cook for an additional minute.
  8. Now flip and cook the other side for about 1-2 minutes until the cheese is melted.
  9. Serve immediately.  Goes best with a bowl of tomato soup.

Notes

Pro tip – Cutting the sandwich diagonally, creates maximum dipping in tomato soup.
